The Manna team is employed by the hospital, with tips and donations being used to benefit health inspired wellness projects within our Castle Rock community.
You don’t have to be visiting a patient or seeing a doctor to come enjoy a healthful meal. In fact, most of our guests are community based. We’ve transformed hospital food into elegant, delicious, fresh and healthy meals and have truly become a destination restaurant for diners.
Chef Dan Skay - Manager, Executive Chef is a graduate of the Culinary Institute of America, Hyde Park, New York and has worked in restaurants, hotels, bed and breakfasts, catering and hospitals for over 30 years. In 1992, Chef Dan was winner of the Great Chefs of America Culinary Competition and also the Grand Prize Winner of Custom Foods Golden Recipe Competition. Other accolades included winner of 1995 Premier Chefs of America, 1996 National Cully Award, 2000 Colorado Governor's Symposium Celebrating Colorado Cuisine, winning Best Colorado Entrée, 2009 AHF National Culinary Competition Gold Medal Winner and the Wall Street Journals' title of Hospital Top Chef, to name a few. Chef Dan was the innovative force behind Manna Restaurant; taking inspiration from the hotel industry to develop the first full service restaurant located in a hospital.
Chef Adam Freisem
Chef Adam Freisem - Chef de Cuisine is a culinary graduate of Johnson & Wales University, with a bachelor’s degree in Food & Beverage Management. Prior to the opening of Manna, Chef Adam was hired as Chef de Cuisine, where he is in charge of menu development, daily operations, and creative awesomeness. Chef Adam brings a passion for the extraordinary and is driven to surprise and delight Manna guests with healthy culinary creations.
